Rich Spinach Avocado Smoothie

Talking about liquid breakfast and food-on-the-go, during morning rush hour I usually rely on my blender to create some magic. Yes I love to ‘drink’ my breakfast after any workout and sometime for lunch too!There are many combinations of ingredients to explore and create that perfect blend. While I love fruit smoothies, I am making green smoothies a regular to my diet. It is alkaline based drink that is healthy for digestion and less acidic to stomach. Drinking green smoothie also helps to fill in any nutrient gap in daily food intake. Spinach is my absolute favourite of all the green (don’t get me wrong I love kale too!) as it is easy to get in fresh or frozen form. It is high in iron, magnesium and potassium.

In the recipe, you may leave out the optional ingredients as these are to add richness of protein and extra fuel as the day go:
Adding Weetabix wheat biscuit provide long-lasting energy, high in vitamins B and folic acid. Always a fan of this number 1 breakfast cereal in New Zealand since my good old days in down under (called Weet-Bix there) because it is less processed, high-fiber, and low in sugar compared to other cereals. Thank goodness this can be found in Dubai under a Weetabix UK brand though produced by a separate company. I cannot wait to try the new gluten-free version made from sorghum.
Adding Lean 95 give high quality plain protein from rice, pea, spirulina. Plus it contain superfood maca – general tonic and energy booster used by the Peruvian.

This green smoothie is rich, thick and creamy that kick-start morning in style and get through the day. This yield two big tumblers for 2 people. I kept any remaining from breakfast in fridge to enjoy during lunch.

Ingredients
  • 1 ripe avocado
  • 1 green apple
  • 200 g frozen spinach
  • 2-3 cups of water depending on liking of consistency
  • 1 scoop of plant based protein powder optional
  • 1 plain Weetabix or Weet-Bix biscuit optional
  • Dried pomegranate for decoration optional
Instructions
  1. Peel avocado's skin and remove the stone.
  2. Cut apple into 4 pieces
  3. Bring spinach, avocado, apple, protein powder, Weetabix/Weet-Bix biscuit and water into blender.
  4. Blend on high for 30-60 seconds, until smooth and creamy.
  5. If mixture too thick you may add a bit more water to thin it.
  6. Decorate with dried pomegranate. (optional)
